Mediterranean Carrot Salad

Ingredients
2 c. raw carrots2 Tbsp. extra-virgin olive oil2 Tbsp. fresh lemon juice1 garlic clove, crushed1 Tbsp. chopped fresh mint1/4 tsp. kosher salt
Directions
Peel and coarsely grate the carrots. Combine with remaining ingredients and toss to coat. Chill or serve at room temperature. Makes 4 (1/2 cup) servings.
