Ingredients
1-pound whole-wheat pasta4 cups broccoli florets1 -2 large onion chopped8 cloves Garlic sliced (I use more)1/4 cup olive oilFresh basil leavesSea salt and fresh cracked pepper to tasteOPTIONAL- You can top with fresh grated cheese OPTIONAL- You can add some chick peas or other beans or grilled chicken or shrimp if you want more protein
Directions
Put a large pot of salted water on to boil. When this is boiling, add the pasta and cook until desired doneness. In a sauté pan add a little water and blanch the broccoli.. or you can blanch it in the pasta water then remove it after 5 minutes. Drain the broccoli and set aside. While the pasta is cooking, Sauté' the onions and garlic in the olive oil until the olives are translucent. Add the basil leaves and a little salt and pepper. Add the broccoli to this and cover and let steam some more. Drain the pasta then add the ingredients together. If it seems a little dry you can add a little more olive oil. This can be eaten hot or cold! YUM!

Love this recipe. Have made now about 4 times. Last night we had family in to enjoy our new balcony. They love garlic. For yesterday, I made veggie change from broccoli to frozen peas. Tastes great with either veggies. - 4/2/11
