1 pkg (10 oz.) frozen spinach, thawed1 scallion minced1/2 clove garlic, minced2 1/2 Tablespoons fat free sour cream1/4 teaspoon salt1/8 teaspoon coarsely ground black pepper
In a skillet, heat the spinach over medium-high heat for about 5 minutes or until the liquid evaporates. Add the scallion and the garlic. Cook until tender. Reduce the heat to low. Add the sour cream, salt and pepper, stirring until the sour cream melts.
Makes 2-3/4 cup servings.
