Sobe Noodles w/ Steamed Vegetables and Wasabi Ginger Sauce

Ingredients
12 oz soba noodles1 cup baby corn2/3 cup sliced bamboo shoots4 arge radished, sliced1 cup sliced scallions1 cup snow peas1 red bell pepper, sliced thin4 large mushrooms sliced1 tbsp wasabi paste6 tbsp rice vinegar6 tbsp low sodium soy sauce2 tbsp sesame oil1 tbsp grated ginger root
Directions
cook soba noodles according to package

drain corn and bamboo shoots, set aside

slice radishes, pepper, mushrooms, scallions

put peas, radishes, pepper, mushrooms in a steamer, cook ntil still slightly crispy, add corn, bamboo and scallions at the end just to heat through

whisk wasabi paste, grated ginger, oil, vinegar and say sauce in large bowl, add vegetables, add drained noodles, stir well to incorporate all of the sauce
