Refried Beans with Brown Rice & Quinoa

2 cups cooked brown rice2 cups cooked quinoa1.5 cups canned tomato1 tsp ground cumin1 can black refried beans4 oz can green chili peppers10 oz frozen spinach, thawed drained3/4 cup Kraft Tex Mex Cheese (light)
Combine rice, quinoa, tomatoes, cumin and chili powder. Spoon 1/2 of mixture in baking dish (sprayed with cooking spray)
combine refried beans, chilis, corn, and chili powder.
Spoon bean mixture over rice.
Spread spinach, squeezed dry on top.
Sprinkle with 6 tbsp of the cheese
Spread remaining rice mixture on top.
Sprinkle with remaining cheese.
Bake @ 375 for 30 minutes.
