Baked Chilli Prawn Noodles

Ingredients
1 Tbl chilli bean paste1 Tbl oyster sauce250g prawns, deviened, peeled with tails intact100g bean thread noodles, blanched1/3 chicken stock1 small red chilli, chopped1 green onion, sliced1/3 cup mint leaves
Directions
Prehaet over to 2-00C. Place the chilli bean paste, oyster suace and prawns in a bowl and toss to coat. Cut 2 x 30cm x 40cm lengths of non-stick baking paper. Use the paper to line a 3 cup capacity shallow-sided ovenproof bowl. Place the noodles, prawns and stock in the bowl, bring the ends of the paper together to enclose and secure tightly with kitchen string. Bake for 15-20 minutes or until the prawns are cooked through. Careuflly open the parcel, letting the steam escape, and top with the chilli, green onion and mint leaves to serve.
