1/4 c canola oil1 c stone-ground cornmeal1/2 c wholewheat flour1/2 all-purpose unbleached flour2 t baking powder2 eggs2 T honey or maple syrup1 1/4 lowfat plain yogurt
preheat oven to 425 C. mix dry ingredients; mix wet ingredients; fold dry ingredients into wet. Do not overmix. Pour into a greased cast-iron skillet (10) and bake about 25 minutes.
