Crockpot Chicken, Shrimp and Sausage Gumbo

1/3 cup all purpose flour1/3 cup canola oil3 cups water1 16 0z package smoked sausage (chopped)1 12.5 oz can of chicken1 14 oz bag pre cooked shrimp3 cups sliced okra1 package frozen onion, pepper, celery mix1/2 tsp each of powdered garlic, red pepper, black pepper

Make the Roux - mix oil and flour together in medium heavy saucepan and cook on medium for 3-5 minutes stirring constantly. Reduce heat to low and continue to stir 5-10 more minutes until dark reddish Brown Color. Set aside to cool
In Cockpot mix 3 cups water and roux. Add all additional ingrediants, except shrimp into crockpot and stir.
Cook on Low for 6-7 hours or high for 3 - 3 1/2 hours. Add Shrimp last 10 minutes of cooktime.
Serve over rice. (not included in calculations)
