Spicy Collard greens and tomato with Tofu and Brown Rice

1 tbsp coconut oil1 small onion chopped3 gloves garlic4 cups collard greens (prepared and roughly chopped)1 cup water (plus more if needed)1/4 tsp red pepper flakes1/2 medium tomato chopped1/4 block tofu1/2 cup cooked brown rice1 tsp Braggs Soy Seasoning (like soy sauce but better)
Saute onion in oil until soft, add chopped garlic, cook a minute more. Add 1 cup water and red pepper flakes. Add collard greens, cover and cook 15 minutes (add more water if it dries out) Then add chopped tomato, cubed tofu and brown rice and cook 5 minutes more.
