3 T. olive oilgarlic1 bag frozen spinach (10 oz.)3 cups cooked brown rice1 cup Better n Eggs1/2 cup skim milk1 tsp. salt1 tsp. pepper4 oz. part skim shredded mozzarella4 T. parmesanSaute garlic in olive oil, mix in rice and spinach. Pour in egg whites, seasoning, and mix with cheese. Pour into sprayed 9 x 13 pan and bake at 350 degree oven for 30 minutes. Cut into 12 servings.
