gilleoin's seitan stroganoff (vegan)

Ingredients
* *Follow Your Heart Vegan Gourmet Sour Cream (2 tbsp), 8 tbsp (remove) * *Seitan - Westsoy, 8 oz (remove) * *exotic mixed mushrooms, 8 oz (remove) * *365 100% Whole Wheat Flour (1 Serving=1/4 Cup), .25 serving (remove) * *Wegmans Spaghetti, 10 oz (remove) * *Buttery Spread, Earth Balance Original, 6 tbsp (remove) * *wegmans red cooking wine, 4 tbsp (remove) * *powder fake beef broth, 1 tsp (remove) * *Aldi Olive Oil, 2 tbsp (remove)
Directions
cut seitan, dredge in flour (mixed with some S&P) heat olive oil, saute mushrooms, after a couple of min. move mushrooms to side of pan, add seitan...brown. Deglaze with fake beef broth (prepared with water) and cooking wine..after alcohol cooks off, remove from heat. Add "sour cream" and set aside....cook pasta (I use linguine #13) and drain...melt earth balance in the hot noodles...serve stroganoff over pasta :)

    I've never made it myself, but tons of vegan cookbooks have a variation using tofu...here's the selection from Vegweb (looks like they have soy-free ones, too)- http://vegweb.com/index.php?board=266.0
