Chicken Cacciatore alla Kelle

Ingredients
1 red bell pepper1 zucchini1 yellow squash1/2 onion5 cloves garlic, minced1 cup cremini mushrooms1/2 cup red wine1/2 cup marinara sauce (canned)1 can stewed tomatoes3 tbsp. drained, rinsed capers8 bone-in skinless chicken thighs2 tbsp olive oil
Directions
Heat olive oil in 14' pan. Brown chicken thighs on both sides until almost cooked, about 15 mins. Remove. Add veggies except for garlic and sautee until they are getting soft. Add garlic and cook for about 30 secs. Add wine and marinara sauce, cook for about 3 mins. Add chicken and cook, covered, or about 15 mins more. Enjoy with your starch of choice!
