AmyJustAmy's Vegan Mushroom Coconut Curry

1/2 lb (250 g) mushrooms3 green onions, finely chopped2 cloves garlic chopped1 t grated ginger1 t curry powder1/4 t salt1/2 t garam masala1/2 c low-fat soy milk1 1/2 t corn starch1/4 t coconut extract2 t lemon juice
Saute the mushrooms, green onions, garlic, and ginger in a little water until softened. Add the curry powder and salt to the mushrooms and continue to cook over low heat, adding a little water as needed, until the mushrooms are softened and the flavors are nicely blended.
Meanwhile, mix together the soymilk, cornstarch and coconut extract.
Add the soy milk mixture and the garam masala to the mushroom mix. Continue to cook until heated through. Remove from heat and stir in lemon juice.
Serve over rice noodles or brown long grain rice. (nutritional info would be separate from this recipe).
