2 1/2 cups all-purpose flour1 teaspoon baking powder1 teaspoon baking soda2 teaspoons ground cinammon1/2 teaspoon ground nutmeg1/2 teaspoon ground cloves1/2 teaspoon salt1/2 cup butter, softened1 1/2 cups white sugar1 cup canned pumpkin puree1 egg1 teaspoon vanilla extract
1. Preheat oven to 350 degrees.
2. Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, and salt; set aside.
3. In a medium bowl, cream together the 1/2 cup of butter and white sugar.
4. Add pumpkin, egg, and 1 teaspoon vanilla to butter mixture, and beat until creamy.
5. Mix in dry ingredients.
6. Drop by tablespoonfuls; flatten slightly.
7. Bake for 15 to 20 minutes in the preheated oven.
8. Cool cookies.
Makes about 3 dozen cookies.
