Flour, white, all-purpose, 1 cup Whole Wheat Flour, 1 cup Granulated Sugar, .5 cup Brown Sugar, 1 cup, packedVital wheat gluten, 1 TbPowdered Nonfat Dry Milk, 1 TbBaking Powder, 2 tsp Baking Soda, 1 tsp Salt, 1 tspCinnamon, ground, 1 tspNutmeg, ground, 1 tsp Ginger, ground, 1 tsp Allspice, 1 tspPumpkin, canned, 29ozEgg white, 2 large or 1/2 cup substituteMilk, evaporated, 1.5 cupbutter, melted, 2Tb Dark rum, 2 Tb
Preheat oven to 350F. Whisk dry ingredients together, set aside. Mix wet ingredients, then add dry mixture. Pour into two greased loaf pans. Bake for 45 minutes, or until toothpick inserted in middle comes out clean. Makes 2 loaves, about 12 slices each.
If you don't have rum, you could substitute 1 tsp vanilla extract.
