Breakfast Quiche

Ingredients
about 4 oz Polenta3 slices Canadian Bacon2 cups Broccoli, chopped 3 Eggs 4 egg whites.5 cup, chopped onion1 - 2 Tbl Cabot 75% Light Vermont Cheddar, shreddeddill to tastenutmeg to taste
Directions
slice polenta very thin and cook. place in bottom of baking dish.
cook canadian bacon, chop and scatter over polenta.
mix eggs, whites, broccoli, onion, dill & nutmeg. pour over polenta/bacon.
bake at 350 degrees for about 30 mins then sprinkle shredded cheddar over and bake an additional 10 minutes.
