Roasted Potatoes with Red Grapes

Ingredients
1 tbsps olive oil1 large onion, halved pole-to-pole and sliced into half moons2 cups red globe grapes or red seedless grapes4 medium red or Yukon Gold potatoes, peeled and cut into chunksFresh thyme, rosemary and oregano, to taste1 tsp red pepper flakes1/2 tsp salt
Directions
Preheat oven to 425 degrees. Toss all ingredients together in a large bowl, and add to non-stick roasting pan or jelly-roll pan. Cook until potatoes are tender and vegetables are starting to caramelize, about 45 minutes. Turn on broiler and broil for 5-10 minutes. Makes 3-4 servings.
