Venison and Black Bean Tacos

18 oz. ground venison1 can black beans1 packet taco seasoning1 Tomato, diced1.5 cups romaine lettuce, chopped3 oz. cheddar cheese, shredded6 low carb tortillas Reduced fat sour creamSalsaMay add chopped onions/peppers
Brown and drain ground venison. Add taco seasoning, 1/3 cup water, and black beans. Mix and heat through.
Chop vegetables and lettuce. Top each tortilla with 1/6 of venison/beans mixture. Top with veggies, lettuce, 1/2 ounce of shredded cheese and salsa and sour cream, if desired.
If you're cooking for one or two, leftovers make a great low-fat taco salad for lunch the next day!
Makes 6 tacos (serving size = 2 tacos)
