Mushroom & Spinach Breakfast Scramble

Ingredients
1 Egg1/8 cup 1% milk1 serving The Laugh Cow Creamy Swiss1/4 cup Mushrooms1/4 cup Spinach1 thin slice Yellow Onion1/4 Tbsp Parkay margarine1/2 Tbsp Olive oil1 Tbsp Salsa Salt & Pepper to taste
Directions
Scramble egg. Add milk and scramble well. Set aside. Heat Olive Oil on medium high heat. Add Onions and Mushrooms. As mushrooms and onions soften, add spinach. Season as needed. Saute all for approximately 1 more minute together. Set aside. Whisk egg/milk again. Heat pan on medium low and add margarine. When margarine is hot, pour in egg. Let cook for approximately 1 minute until bottom starts to firm up. With spatula, push firmed eggs toward the middle and tilt pan so remaining liquid egg gets cooked. While everything is still somewhat soft, add veggies and laughing cow swiss. Mix together until done (another 30 seconds to 1 minute). Top with Salsa.
