3 Boneless, skinless chicken breast (8 oz weight)3 T. Butter1 T. Flour1/4 t. salt1 t. dried tarragon1 Can Low-sodium chicken broth1 T. Dijion mustard1 t. dried parsley
Melt butter in large skillet over high heat. Cut chicken into 6 to 8 bite size pieces. Add chicken to skillet and sprinkle with flour, sale and tarragon. Cook 5 minutes, stirring constantly. Add chicken broth and mustard to chicken. Stir to loosen any browned particles. Cover and cook 2 to 3 minutes or until chicken is no longer pink. Sprinkle with parsley. Serve as appetizer with toothpicks or serve over rice as an entree’.
