pancetta potato fritatta

Ingredients
3 large eggs1/2 cup liquid egg white2 white potatoes baked peeled and cut into cubes1/2 cup frozen peas1 onion sliced1/3 cup shredded cheddar cheese2 cloves garlic pressed150grams pancetta
Directions
In a large ovenproof skillet saute potatoes and onion over medium/high heat until softened remove from pan add pancetta cook until crispy add peas and garlic cook another min until warm add potatoes and onion back whisk together egg and egg whites pour over pan and cook till starting to set, sprinkle cheese over top and place under broiler set to 450F bake until egg is full set. serves 6
