Asparagus and Chicken Fettucine

1 large chicken breast (cut in slices)1/3 onion chopped2 cloves garlic chopped1/3 pound fresh asparagus spears4 oz. thin whole wheat spaghetti¼ C light parmesan/romano cheese grated¼ C fat free sour cream4 T fat free half and halfDash balsamic vinegar1T basil olive oilDrizzle of balsamic vinegar
Stir fry asparagus in a small amount of water and olive oil in a skillet over high heat till crisp (use a small amount of salt and pepper); remove to a bowl. In the same skillet brown chicken in basil olive oil with onions, garlic and salt and pepper. When almost done drizzle with balsamic vinegar. Meanwhile stir together the cheese, sour cream, half and half and balsamic vinegar. Cook spaghetti in boiling water till al dente. Drain spaghetti and place in a serving bowl. Pour cheese sauce over chicken, add asparagus and heat through. Pour over spaghetti and mix well. Serve with additional parmesan/romano cheese.
