Cinnamon Vanilla Muffins

1 3/4 c. all purpose flour1/2 c. sugar1 tbs baking powder1 tbs cinnamon1/4 tsp salt1 tbs vanilla1 egg3/4 c. milk1/4 c. canola oil
Combine dry ingredients in medium sized bowl. In another bowl combine your wet ingredients mixing well. Add to the dry ingredients and stir until just moistened. Being careful to not overmix! Spoon in to prepared muffin tins and bake at 400 for 12-15 minutes. Makes 12.
