Ingredients
2 Cups Romain lettuce, chopped1 Cup Baby Spinach & Arugula Mix, chopped0.5 Cups (2 oz) Baby Cucumber (with peel)0.5 Cups (2 oz) Green Peppers, diced2 oz (1 small) red tomato, raw, wedges2 slices onion, raw, diced2 oz (1/2 small Haas) Avacado, diced and tossed with lemon juice4 oz boneless, skinless chicken breast(remove)1/4 Cup Shredded 2% Mozzarella
Directions
Makes one large lunch salad.

Cook chicken, spiced to taste, and dice. Assemble all ingredients and serve with desired dressing.
