Meatballs and Gravy

-2 C. uncooked rice-1/2 tsp. salt-1 C. sliced button mushrooms-2 tsp. cornstarch-salt and pepper to taste-1 lb. ground turkey-1 tsp. dried Thyme-1 C. beef broth-Cooking spray
Cook rice according to package directions.
Meanwhile, mix turkey, salt, and pepper. Shape into meatballs, set aside.
Spray large skillet with cooking spray and set pan over medium-high heat. Add mushrooms and cook 2-3 minutes. Remove from pan, set aside.
Add meatballs to pan. Cook until brown, turning frequently. Return mushrooms to pan. Add Thyme, salt, and pepper. Add 3/4 C. broth and bring to a boil. Reduce heat to medium, simmer until meatballs are cooked through.
Dissolve cornstarch in remaining 1/4 broth. Add to pan and simmer one minute.
Serve over rice.
