Chicken Fajita meat

1 lb boneless, skinless chicken breast, cut into thin strips1 T olive oil1 T lime juice1 clove garlic, minced1/2 t chili powder1/2 t cumin1/2 t crushed red pepper flakes1/2 t black pepper1/4 t salt (I usually reduce this by half)
Combine olive oil, lime juice, garlic, chili powder, cumin, red pepper flakes, black pepper and salt. Pour over chicken and stir to coat well. Coat the bottom of a skillet with a small amount of olive oil, or non-stick cooking spray. Cook the chicken strips over medium heat, stirring often, until chicken is cooked thoroughly. Serve with flour tortillas and desired vegetables and condiments. This also works well with beef.
