Ingredients
2 bunches parsley- FINELY minced(3 cups after cutting2 tomatos diced(2.5 to 3 cups chopped)1 bunch green onions- finely chopped1 cup loosely packed mint leaves- FINELY minced1/3 cup fine cracked bulgar wheat1 cup water2 Tbls lemon juice 1 teas salt
Directions
In the morning before you prepare- throughly wash all vegetables and spices and set aside on a towel to dry for several hours.

Also in the morning bring the water, lemon juice and salt to a boil- add cracked wheat and stir well until boiling- cook 1 minute stirring- then cover, leave on burner, and allow to sit until cool.

WHen ready to eat- finely mince- and I do mean FINELY! Parsley, mint and green onion. Dice the tomatos, and toss to mix. Add 6-8 servings of the basic middle eastern salad dressing I also have shared. ( make sure to adjust calorie count) Some like more lemon than others! So I let it off- I usually use 6 servings of dressing and it makes 6 generous 1 cup servings.
