Salade de pissenlits (Dandelion Salad)

Ingredients
500g dandelion leaves, washed and dried3 tablespoons ground nut oil200g smoked bacon cubes2 tbsp red wine vinegarsalt and freshly ground black pepper
Directions
Arrange the dandelion leaves in a salad bowl. Heat the oil in a small frying pan and fry the bacon cubes until crisp - about 5 minutes. Stir in the vinegar and salt and pepper to taste. Pour over the salad leaves so that they wilt under the heat of the bacon and toss well. Serve immediately.

    Sounds yummy. I make something similar with 'curly lettuce' - what we in the UK call endive or frisee but this should be delicious - love the pepperiness of dandelion. Will post again when I've tried it. - 3/16/11
