Pampered Chef Buffalo Chicken Lasagna

Ingredients
1 jar tomato sauce1# cooked chicken breast, diced1 med onion, chopped1 bell pepper, diced3 TBS buffalo rub, Cajun seasoning or Frank's Red Hot (to taste)1 small container part-skim ricotta2C part-skim or 2% mozzarella cheese, divided1 egg3 cloves garlic, pressed1/2 tsp salt (I omitted this from the calculations)9 uncooked no-boil lasagna noodles (Barilla was the only brand I could find)1/2 C crumbled blue cheese
Directions
~Preheat Oven to 350*
~Combine tomato sauce, chicken, onion, pepper and rub and mix well
~In a separate bowl, combine ricotta, 1.5C mozzarella, egg, garlic and salt (if using)
~Assemble:
Spread 1/3 of chicken mixture in bottom of pan
Top with 3 noodles, breaking to fit as needed and pressing into chicken mixture
Spread 1/3 of cheese mixture over noodles
Repeat layers 2 more times and sprinkle with remaining mozzarella cheese

~Bake, covered, 45 minutes
~Remove cover and continue to bake for 15-20 minutes or until cheese starts to brown
~Remove from oven, sprinkle blue cheese on top and let stand, covered, 20 minutes before serving.
