Healthier Baklava

1 box phyllo dough½ c. melted butter½ c. olive oil2 lb. walnuts, finely ground½ c. sugar1 tbsp. cinnamon1 tsp. nutmeg1 tbsp. lemon zestSyrup:1 c. honey½ c. water½ c. sugar2 tbsp. lemon juiceCinnamon stick
Brush bottom and sides of lasagna pan with melted butter.
Combine walnuts, sugar, cinnamon, nutmeg, and lemon zest in a large bowl.
Place one sheet of phyllo dough on the bottom of the pan and brush the top with melted butter. Place another sheet of dough on that and brush with melted butter. Keep adding sheets until the bottom is 8 sheets thick.
Sprinkle with 1 cup walnut mixture.
Cover with 4 sheets of dough, buttered as before.
Sprinkle with 1 cup of walnut mixture.
Continue in established pattern until the walnuts are used up. Cover with 8 sheets of dough, buttered as before.
Let sit 1 hour. Before baking, score the top into 1 ½” diamond pattern.
Bake in preheated (325 degrees) oven for 1 hour.
Make the syrup by combining all ingredients in a saucepan and bringing to a boil. Simmer 10 minutes, and remove from heat. Remove cinnamon stick.
Allow baklava to cool before drizzling syrup over top. We prefer to keep the syrup light, but some people like their baklava drenched. Personal preference.
