6 eggs, 3 cups milk, 1 cup diced onions, 12 cooked slices bacon, 3 cups shredded Swiss (and/or Mozzarella mixed) into 2 cooked previously frozen pie crusts. Makes two quiches, six slices each.
Cook bacon (I use pre-cooked), cool, crumble. Put pie crusts in oven at 350-400. Crack eggs, whisk, add milk in bowl. Take out pie crusts when light brown, divide diced onion, layer half bacon, onion and cheese in each pie crust. Whisk milk and eggs, pour half mixture over each quiche. Cook in 350-400 degree oven for an hour or until light brown. If your quiche browns too quickly, cover with foil LIGHTLY and reduce heat to cook a bit longer, make sure center is set. This quiche is filling, great for breakfast and easy to reheat in microwave for a minute or less. I reheat mine on a paper towel and the crust doesn't get soggy.
