Turkey-Bacon Turnovers

Ingredients
8 oz. Turkey, deli-style smoked, thinly sliced4 slices Swiss Cheese4 strips bacon1 sheet puff pastry4 tsp dijon mustard1 egg, blended with 1 tsp water1/4 cup white wine vinegar2 tsp sugar1 cup cherry tomatoes, halved1 avocado, peeled, pitted & sliced1/4 cup scallions, sliced
Directions
Preheat oven to 400; line a baking sheet with parchment

Prepare turkey, cheese & bacon. Roll pastry on a floured surface to 11" square. Cut into 4 squares; spread each with 1 tsp mustard. Arrange turkey, bacon & cheese on half of each pastry square, tearing or folding them to fit. Brush edges of pastry with egg wash, fold to form a triangle, and seal shut using the tines of a fork. Place turnovers on prepared backing sheet, brush with more egg wash, and sprinkle with kosher salt. Bake 25 minutes, or until pastry is golden and crisp.

Stir vinegar, sugar and salt and pepper (to taste) together in a bowl. Add remaining ingredients and toss gently to combine. Serve turnovers warm with tomato salad.
