Prawns with Roasted Cauliflower

Ingredients
1/2 cauliflower, cut into florets (about 300g)2 Tbl olive oil1/2 tsp paprika500g green prawns, peeled, deveined, tails intact1/4 cup parsley4 Tbl hummusLemon wedges to serve
Directions
Preheat over to 220C and a chargrill pan or barbecue to high. Place cauliflower on a baking tray and toss with the olive oil and paprika. Season. Roast for 15 minutes or until tender and browned. Set aside.

Spray prawns with olive oil spray and grill 1 minute each side until their colour changes. Set aside.

Toss cauliflower, prawns and parsley together. Divide among serving bowls and serve with hummus and lemon wedges.
