Ingredients
Aubergine, peppers, minced beef, garlic and tomato
Directions
Cut aubergine into small cubes add salt and reserve. Put a tablespoon of olive oil in a large pan add garlc, chopped onion, chopped peppers. then add miced beef, stock cube and basil cook for about 10 minutes and add the aubergine. Toss with the other ingredients for a 2 minutes the add the tomatos and tomato frito add (a small glass of red wine opcional) leave to simmer for 90 minutes or until all vegetables are tender.
