Roasted root vegetables

Ingredients
Ingredients:Carrots, raw, 1 cup, choppedOnions, raw, 1 cup, choppedParsnips, 0.5 cup slices Sweet potato, 1 cup, cubes Butternut Squash, 1 cup, cubes *Extra Virgin Olive Oil, 2 tbsp *Potato, raw, 1 cup diced
Directions
Chop all vegetables, keeping them roughly the same size, toss with olive oil, salt and pepper. Place in dish and bake at 375 for 90 minutes. Stir every 30 mins.
Pat attention after 60 minutes, as your vegetables may be done, it would be good to check at this time to ensure they do not burn.
