Cajun 15 Bean Soup

Ingredients
20 oz. bag of Hurst's Cajun 15 Bean Soup (dried beans)14 oz. Louis Rich Turkey Smoked Sausage, sliced in small slices or chunks.1 large onion, chopped1 14.5 oz can stewed tomatoes (no salt added)juice of one lemon1-2 cloves garlic, minced
Directions
Traditional Method:
Soaking: Place beans in a large pot, cover with 2 quarts of water. Allow beans to soak at least 8 hours or overnight.

1. After soaking, drain water, add 2 quarts of water.
2. Bring beans to boil, reduce heat and simmer un covered for 2 1/2 hours.
3. In a skillet sprayed with cooking spray, saute onion and garlic.
4. Add sausage, beans, tomatoes, lemon juice and cajun flavor packet (in bag of beans). Simmer another 30 minutes. Salt and pepper to taste.

QUICK COOK METHOD:
1. Place rinsed beans in a pot with 3 quarts of water.
2. Bring to a rapid boil. Reduce heat, cover and continue boiling 60-70 minutes. Stir occasionally to prevent sticking.
3. After 60 minutes, add sauteed ingredients. Simer for 30-45 minutes.
4. Add contents of cajun flavor packet 1 to 2 minutes before cooking is completed. Salt and Pepper to taste.
