Smashed Cauliflower

Ingredients
1 large head of cauliflower2 Wedges of Laughing Cow Light Swiss1 - 2 tsp. horseradish saucesalt pepper
Directions
Cut cauliflower into small pieces. Boil until tender. Put into food processor and process until smooth (like mashed potatoes). Add remaining ingredients and mix well.

Alternatives: Cook 2 cloves of garlic and mash with for added flavor. Or use the garlic and herb flavor Laughing Cow Cheese. Yummy!
