Debby Maugans Nakos' Muffins

Ingredients
unsalted butter for greasing the pans1/2 c all-purpose flour1/4 t baking powder1/4 t baking soda1/8 t salt1/2 t ground cinnamon2.5 T sugar1 medium egg1/4 c canola oil1/2 t pure vanilla extract2 T crushed pineapple3 T chopped nuts2 T raisins
Directions
Preheat the oven to 350.
Butter the bottoms and rims of mini muffin pans.
Whip the egg, sugar and oil together in small bowl.
Sift the flour, baking powder, baking soda, salt, cinnamon together.
Add the flour to the first bowl.
Add nuts, raisins, pineapple, and vanilla.
Drop by fork into mini muffin pans.
Bake 12-15 minutes.
Cool in the pan 5 minutes.
Run a knife around the edges. Remove and finish cooling on a rack.
Makes 12 mini muffins.
