quinoa and potatoes with caraway

Ingredients
Olive Oil, 1 tbsp Garlic, 2 clove dicedOnions, raw, 1 large thinly slicedRed Potato, 1/2 lb sliced into matchsticks*Caraway Seed, 1.25 tsp quinoa 1 cupsea salt
Directions
heat oil in pan, saute garlic, onion, potatoes, and caraway for 1 min. stir in stock and return to boil. stir in quinoa and salt, return to boil, turn to low heat and simmer for 15 minutes. remove from heat and allow to stand for 5 minutes covered.
