Corn Chowder--no dairy

Ingredients
2 large frozen bags of corn1 large onion2 large potatoes1 red bell pepper3 c chicken broth1-2 T butter1-2 T olive oil
Directions
Saute onion in butter & oil. Add 1 bag of corn, potatoes, bell pepper, and 1 cup of broth. Cook, then purse with a mixing stick. Add 1 bag of corn and 2 cups of broth. Season to taste. May serve immediately or give it time to simmer.
