BBQ tofu with cheesy quinoa

2 cups dry Quinoa2 cups dry Whole wheat couscous1 medium Onion-diced2 cloves Garlic-chopped1/2 cup BBQ Sauce1/4 cup White wine1 block Extra firm tofu1 cup White cheddar cheese-shredded
Cut the tofu into 1 inch cubes and marinade in bbq sauce for about 15 minutes. Reserve marinade. Bake in 375 degree oven for 30 minutes, stirring halfway through. Cook the quinoa in a rice cooker with 6 cups of water. Once the quinoa has cooked fully turn off heat and add the couscous. While the quinoa/couscous is cooking sautee the diced onion and garlic until it starts to brown. Add in the white wine and continue to cook until the onion carmelizes. Add reserved bbq sauce to onions. Stir the onion mixture and cheese into the quinoa mixture. Serve tofu on top of the quinoa.
