Potato and bean enchiladas

Ingredients
2 large or 4 medium sized potatoes1 can of organic pinto beans1 can of Las Palmas green enchilada sauce1 jalapeno6-8 tortillas
Directions
It doesn't get any easier than this! Scrub and dice potatoes.
Dice and boil in salt water. Once potatoes are cooked, drain. Drain pinto beans and add to potatoes. Pour in enchilada sauce. Serve on warmed tortillas.

Voila! Warm, filling, delicious!
