Stuffed Artichokes

Ingredients
Medium to large artichokes.Olive OilBread CrumbsGarlicGrated Parmesean Cheese
Directions
Cut points off leaves and pull out the center yellow leaves to make room for stuffing. You may pound the Artichoke on the top to loosen the leaves a bit. Use bread crumbs, crushed garlic, grated parmesean cheese, and olive oil to make a paste. Meanwhile the water is boiling at about 2 inches high in pot. When the paste is ready (mixed throughly) stuff the Artichokes and place them flower side up in pot to steam. About every twenty minutes use water from pot to drizzle over the artichokes to moisten them more throughly. They should steam for a little over an hour, depending on the Artichoke its self.

    This is on tonight's dinner menu but I learned to make it by sautéing the bread crumbs in the oil and then mixing in the garlic & cheese - also add fresh chopped parsley. I par boil the artichoke after trimming it, then separate the leaves to stuff and then bake in a pan filled with water - 10/16/13
