Slowcooker Corned Beef & Cabbage

1 medium onion, quarterd2 gloves garlic, minced2 large potatoes, peeled and quartered2 large carrots, peeled and cut into chucnks2.5 lbs corned beef brisket1 bay leaf1 cup water1 small head of cabbage, cut into wedges1 Tbsp. stone ground mustard1/2 cup brown sugardash of ground cloves
1. Place the first 7 ingredients, (up until the cabbage,) in the slow cooker.
2. Cover and cook 5 hours on Low.
3. Add cabbage and continue cooking for an additional 2 hours on Low. (Do not over cook as the veggies may become mushy.)
4. In a small bowl combine mustard, brown sugar and ground gloves.
5. Stir in mixture and cook for an additional hour on Low.
Serving Size: Makes approx. 10 servings
