Italian Sausage Stirfry

3 whole free range eggs3/4 cup egg whites4 Niman ranch Italian Sausage(chopped)1 large zuchinni squash(cubed)1 large yellow squash(cubed)16g olive oil1 cup broccoli slaw16 spears asparagus(1 inch pieces)6 cloves garlic1 medium yellow onion(chopped)
heat sausages in broiler, approx 8-9 minutes
saute garlic and onions until translucent in olive oil
add cubed squash and stirfty until just soft
blanch asparagus and cut into 1 inch pieces and add to saute pan
combine eggs and egg whites in bowl and whisk gently
cook eggs in separate pan and scramble, then add to saute pan
chop sausages into small pieces and add to saute pan and serve
