Lexy's Lasagna

Ingredients
1/2 lb. Ground Beef1/2 lb. Sweet Italian Pork Sausage1 C. Low Fat Ricotta Cheese1 C. Low Fat Cottage Cheese (small curd)6 oz. Mozzarella Cheese (grated)6 oz. Cheddar Cheese (grated)1 Large Egg1-1/2 C. Cillantro (chopped)1 -32oz Ragu Pasta Sauce - Garden Combo6 Medium Carrotts1-1/2 C. Chopped Portabella Mushrooms1/4 C. Onion (chopped)2 tsp. Dried Parsley - or fresh 2 tsp. Oregano2 tsp. BasilSalt & pepper to taste1 Medium Green Bell Pepper1 C. Water10 Large Lasagna Noodles3 Cloves of Garlic Minced4 oz Pepperoni
Directions
1. Crumble ground beef and sausage into skillet or frying pan, brown completely. Add onions, seasonings, green pepper, carrots and pasta sauce. Simmer, stirring occasionally, about 25 mins. Sauce will still be watery.
2. In a medium bowl, combine: cottage cheese, ricotta cheese, egg, chopped cilantro and mozzarella cheese. Set aside.
3. In a 13X9 inch pan place 1/3 of the sauce/ meat mixture. On top of that lay 5 *UNCOOKED* Lasagna noodles, slightly overlapped.
4. On top of the noodles spread 1/2 of the riccotta/cottage cheese mixture. Add another third of the meat sauce mixture and continue layering with another layer of noodles and ricotta mixture. Layer the last third of the meat sauce mixture on top.
5. Pre heat oven to 350. Cover pan with tin foil. Bake for 1 hour.
6. Remove tin foil, sprinkle top with cheddar cheese, bake uncovered another 15-30 minutes or until cheese is melted and noodles are cooked.
