Ingredients
3/4 C. Honey3/4 C.Sugar3 Eggs3/4 C. Applesauce1/2 C. Canola Oil1 TBSP Vanilla2 C. Grated Zuchinni1/3 C. Ground Flax1/3 C. Wheat Germ1 3/4C Unbleached Flour1 3/4 C Whole Wheat Flour1 TBSP Cinnamon1 tsp Baking Soda1 tsp Baking Powder1 C. Walnut Meats
Directions
Beat eggs until foamy: Add sugar, honey, oil, vanilla, applesauce and grated zuchinni. Mix well but lightly. Add dry ingredients and blend. Stir in nuts. Makes 2 loaves. Bake 1 hour at 325 Degree F.

    I'll try this one since you're using whole wheat flour, flax seeds and the wheat germ. I also like the idea of the walnuts; however, since I have pecans on hand right now, I'll use roasted pecans instead. After I purchase my gas and if I have a few cents left, I will buy walnuts for next time. - 5/19/11
