Shrimp Stir Fry

Ingredients
4 Tbs Peanut Oil Divided4 cloves garlic, minced4 scallions chopped1 Tbs grated ginger10 0z raw shrimp, peeled2 small zucchini sliced10 oz baby bella mushrooms slicedSauce:6 Tbs Low Salt Soy Sauce2 Tbs Rice Wine1 Tsp Sugar1/2 tsp vinegar1/3 tsp sesame oil2 tsp corn strach
Directions
Combine sauce ingredients and set aside.

Heat 2 Tbs oil and stir fry ginger, garlic and green onions for 2-3 minutes. Add shrimp and cook approx. 3 minutes each side. Remove shrip from pan. Add 2 Tbs oil and add zuccini and mushrooms and stir fry for about 5 minutes. Return shrimp to pan and add sauce. Stir into ingredients - it should be thick and bubbly. Serve with brown rice.
