Chicken, Pear and Walnut Salad

Ingredients
12 ounces cooked chicken breast, shredded4 cups torn mixed greens4 cups torn arugula leaves2 ounces gorgonzola crumbles2 medium pears, cored halved and sliced.2 TB chopped fresh basil2 TB chopped fresh mint1/4 cup champagne or balsamic vinegar2 TB extra virgin olive oil1 TB dijon style mustard2/3 cup chopped walnuts, toasted2 green onions, thinly sliced.
Directions
1) In a very large bowl combine the chicken, greens, arugula, cheese, pear slices, basil & mint. Set aside

2) In a screw top jar combine the vinegar, olive oil and mustard. Cover and shake well. Drizzle over chicken mixture. Toss to coat. Top individual servings with walnuts and green onions.
