Barb's Mixed Beans and Ham

Ingredients
1 cup chopped carrots1 cup chopped celery1/2 cup chopped onion1 can Bush Mixed Beans (3.5 cup)1 can Bush Great Northern Beans (3.5 cup)1 can Borrelli Fava Beans (3 cup)1 can Goya Black Beans (3.5 cup)8 oz. package Cumberland Gap diced ham4 cups Beef broth3 cups water1 5.5 oz. can Campbell's tomato juiceCumin, pepper, hot sauce to tasteIn large stock pot saute' onions, carrots, celery till onions and celery are translucent. Open and rinse all beans (DON"T rinse the black beans). Add ham, cumin and pepper to taste. Add all beans except for black beans to pot. Add beef stock. Add water. Add black beans and juice from can to food processor till smooth. Add "paste" to stock pot (for thickener). Add hot sauce to taste. Add can of tomato juice to mixture. Bring to a boil, reduce heat to simmer and let cook for a few hours.
